We (Alex mostly, I like the eating part!) loooove experimenting with food, especially with those healthy recipes that make you feel like you’re having forbidden food, like my delicious Paleo pizza.
But when my husband told me about these sweet potato chips in the microwave, ready and crispy in just a few minutes, I was pretty sure it wasn’t going to work.
Boy, was I wrong! Not only it worked, they were absolutely delicious! Take a look!
Why this snack/garnish is great for us.
It’s in line with our diet. As we try to be as Paleo as possible, we use sweet potatoes instead of potatoes. They are very versatile and truly delicious.
It’s ready in 5 minutes—for real!

What you need.
Just one sweet potato, with the skin on. Oil, salt and pepper.
How you make it.
We followed this recipe, but had to adjust the cooking time as every microwave is different.
We simply cut the potato in slices (our crappy mandoline wouldn’t work, so we sliced it by hand). We put the sliced potato in a bowl, drizzled with enough oil, added salt and pepper and tossed. We use Rig Tig mixing bowls with lid (bought separately), which are great if you don’t want to get your hands dirty.
Next, we just put oven paper on the microwave tray, covered it with the sweet potato slices placed in one layer and… straight into the microwave! Yes, it’s that easy!
After a few attempts, we learnt that:
With our microwave (which is not a bad one), 3 1/2 minutes on high power weren’t enough. We cooked for ~3 minutes longer (about 6 1/2 minutes in total), checking them once in a while to make sure they didn’t burn. Crispy and yummy!
We tried a second batch with our microwave Crisp function. So much better! Just 5 minutes and we didn’t even need to check on them. Crispy and yummy!
If you put less slices on the tray, you’ll need to adjust the cooking time accordingly. If you let them cook for the whole 5 mins, your chips might end up looking like this (if your microwave doesn’t explode in the process)! Crispy, but definitely not yummy!
